We pride ourselves on producing fresh, vibrant dishes by maximising seasonal produce from local suppliers. We use a traditional artisanal drying technique where the water is slowly extracted from the pasta at a temperature below 38°C. We source our grains from producers in Ireland and England, choosing the mills according to the quality of their grains and traditional processing methods.
