Our story began when we met 10 years ago when while studying Baking & Pastry in TU Dublin. Since then, we have been inseperable. We gained experience through many years of hard work and our desire to keep learning. Our dream was always to open a bakery together someday. In March 2023, we opened Noisette in Rush, Co.Dublin. At Noisette, we produce a range of long fermented sourdoughs (48hr process from mixing to baking), as well as continental and traditional breads. We use organic flour, water & salt in our sourdoughs. Our handcrafted pastries are a 2 day process made using organic butter. We are 2 passionate bakers who cares deeply about our craft and we love trying new products and flavours from all around the globe.
