We have being producing Irelands first sheeps cheese on our family farm in Co. Clare since 1988. It is a speciality handmade cheese that is easily digested,highly nutritious and suitable for people with cow dairy allergies. When young it has a mild nutty flavour. As the cheese matures the flavour becomes more unique revealing a complexity of flavours.
